Tasting Notes : The palate is soft with plenty of fresh appley fruit overlaid by notes of candied fruit, ginger and vanilla on the finish.

Producer : Moet & Chandon

Method of Production : Fruit came from all over the region, Moet own vineyards in 13 of the top villages of Champagne and supply 25% of their own fruit. The hand-picked bunches were pressed whole so little body or colour came from the skins. The free-run juice fermented in stainless steel tanks. After blending the different varieties and vintages, the wine was bottled for second fermentation. The bottles aged for 3 years before degorgement, creating richness from the yeast lees.
