This wine's grapes were sourced from the Orange region in New South Wales, which one reaches by climbing up and over the Great Dividing Range west of Sydney. The result is an altitude of 800 to 900 meters above sea level and temperatures rarely rising above 30°C in the summer - practically freezing for Australia! The extra finesse and elegance these cooler temperatures produce are very much evident in this wine.
Tasting Notes : An intensely flavoured wine, with lifted floral aromas from the Viognier, and plum, white pepper and raspberry aromas from the Shiraz. These flavours carry on to the long, intense palate and integrate well with the savoury tannins and toasty French oak nuances.
Producer : Arrowfield Estates
Method of Production : The grapes were destemmed, crushed and cold macerated for 24 hours prior to being cofermented in stainless steel tanks over seven days. The wine was then pressed off the skins and spent four further months ageing in tank with malolactic conversion encouraged. The wine was fined with egg white, filtered and bottled.
