ABOUT THIS WINE: The internationally renowned village of Pommand is in the Coté de Beaune area of the Coté d'Or. The Epenot Premier Cru site produces Pinot Noir which is balanced and full of flavour. Winemaker, Nicholas Potel chose to ferment this wine without de-stalking the grapes for this vintage. The ripe wood of the stalks adds more structure in warmer years such as 2003.The grapes from the organically farmed, low-yielding vines are gently fermented and pressed and then matured for just over a year in 80% new French oak. To retain this flavour and complexity this wine has been minimally treated during production. This may result in a small, harmless sediment forming over time in the bottom of the bottle.
SERVING: Serve at room temperature, ideally decant an hour beforehand to release the aromas and flavours. This wine is the perfect partner for beef or pork casseroles and braises, especially classic boeuf bourgignon, or try it with fine soft cheeses.
KEEPING: You can enjoy this wine now while it is young and fruity, but it will also keep well for up to five years if cellared correctly, becoming more mellow, soft and rounded with age.
