ABOUT THIS WINE: Australia's best Sauvignon Blancs come from relatively cool vineyard sites, and this outstanding wine is no exception. The grapes were sourced from vines near the village of Hahndorf in the Adelaide Hills area of South Australia, which is renowned for well-balanced, cool-climate fruit grown at high altitudes. The winemaker was Robert Mann.
SERVING: Serve lightly chilled. This is a refreshing aperitif, or try matching it with simple fresh fish dishes, such as fried whitebait or trout. It also goes well with tomato salads, roast vegetables and goat's cheese.
KEEPING: Enjoy this wine while it is fresh and young, opening it within 6 months of purchase. Once opened, finish the wine within 2 days, storing the resealed bottle in the fridge between servings.
