It was a difficult harvest in Western Cape, but the full ripe style shows good South African Sauvignon varietal definition, and stays crisp and fresh.

Method of Production : Hand-picked grapes from no fewer than 16 sites in the Western Cape were rapidly crushed and pressed - pressings were kept separate and not blended back into the wine. Cold-settled for up to 60 hours, the must then fermented in stainless steel for an average of 18 days at 15°C. After partial contact with the lees, the wine was cold stablised and filtered, fined and bottled immediately.
